Last week, we went on a long beach vacation to our favorite place in the world, the quaint little Island of Little Gasparilla. I wrote about it in our food memoir We Laugh, We Cry, We Cook (in stores next week.) It’s where Jared and I got married, where we took Jackson for his first beach experience, and where Jared’s family has been vacationing for twenty years. To put it mildly, it’s a special place for our family.
We took along the Mimi because we love her and Jackson loves her…and well, we knew it was the only way we’d get any alone time. Thanks to her, Jared and I enjoyed an amazing all vegan dinner at Vino Loco Tapas and Wine Bar one night to celebrate our sixth anniversary. We were the only diners (it’s off season right now), and we got special treatment from the chef, who hand delivered each organic, well-thought out plate to our table. Simple flavorful food made with quality organic ingredients that let the veggies be the star. My kind of food! And then there was vegan gelato made out of almond milk. Oh my. The gelato was so amazing, we swung by on our way home to get more for the long road home…and to share with Jackson and Mimi who missed out the first time. I ate my scoop with one of Jackson’s leftover chocolate birthday cupcakes. I can’t remember the last time I had cake and ice cream. It was like a party in my mouth.
Black Bean Cakes over gaucamole (made with local avocados), with refreshing jicima and carrot salad. Bruschetta with a white bean spread. Loved that sneak of protein!
My favorite. Simple criminis sauteed in fresh garlic, olive oil, and sherry with parsley, served on crispy baguettes.
My life is complete. Vegan Sour Cherry & Almond gelato made from almond milk.

Did I say chocolate cupcakes up there? Oh yes! My sweet Jackson turned two on Saturday….and my usually healthy little eater has a dark secret. He loves nothing more than chocolate cupcakes. I used my go-to Chocolate Cupcake Recipe from Chow.com. They are quick and easy and don’t call for any weird ingredients. I subbed almond milk, whole wheat flour, and coconut oil this time (working with our limited pantry on the island). They didn’t rise quite as much as the first time I made them with canola and white flour, but they were still fluffy and delicious…and healthier. 🙂 We skipped icing in lieu of a dusting of powdered sugar. We aren’t much of an icing family…and it’s usually just fat and sugar anyway. We let him blow the powdered sugar on his cupcake instead of blowing out a candle. He thought that was WAY fun!

Uh, do you think we have a two-year old on our hands? Some big kids were walking by and he went total “cool guy” on us. Hilarious.
Trying to get a decent family picture on a windy beach (of course we took pictures on the ONLY windy night) with a toddler is no easy task.
“Whoohoo, I’m two!”
He told me one day, “Look mama, BIG sandbox.” “Isn’t God cool to give us a big sandbox, buddy?” I smiled. “Mmmhmmm.”
Who needs candles when you can blow powdered sugar on the cake.

My sister describes herself as an “offbeat observer who uses her wit to weave together comic takes on the ordinary.” I can testify that she is a connoisseur of life’s small joys, squeezing every drop of happiness from any tiny, remotely fun or interesting experience. Here is a picture that my grandson George took of my sister on a recent trip to Seattle. This was our first stop, a quiet Asian tea house down the street from Pike’s Market. I swear, she’d only had one sip of a mild jasmine tea. But leave it to my sister to find it a euphoric experience.

I love receiving presents from my sister Rachel, because she thinks of the most unusual, wonderful, slighty quirky gifts. For my birthday this year she gave me a little battery-powered milk foamer and a tiny Vietnamese coffee maker. (Which she promises to show me how to operate someday.) She may send adorable comical napkins for me to use at my next party, or a unique and tasty gourmet treat. One year on my birthday, she mailed me pretty jar of something called Carrot Cake Jam. Or was it Carrot Cake Chutney? Anyway, whatever it was called, it was AMAZING. Rach told me to put some cream cheese on a cracker, top it with the carrot mixture, and wait for my mouth to get very happy. So I did as I was told and about twenty minutes later, there was nothing left in the jar. Years later, I would sometimes think about that “perfect bite” of sweet-piquant cinnamon and slighty crunchy carroty-raisin goodness, mixed with the smooth salty flavor of cream cheese and crackers…. and feel sad that I’d probably never come across a jar of that yummy Carrot Cake Watchamacallit ever again.
Then last night I decided to create, to the best of my ability, a similar version. Eureka! I did it! This stuff is amazing on crackers, but also a fun carrot cake “mix-in” for yogurt or ice cream or atop almond buttered toast. An easy and unique treat to serve at your next party or bring to a hostess. .

Carrot Cake Chutney
Carrot Cake Chutney
Makes about 1 1/4 cups
Ingredients
5 medium sized carrots (preferably organic) peeled and chopped into 1 inch pieces
1/3 cup well drained crushed pineapple
1/3 cup agave nectar
1 T. brown sugar
Pinch salt
½ t. vanilla
2 t. cinnamon
3 T. raisins
2 T. white vinegar
Directions:
Process carrots in a food processor or blender until they are about the size of oatmeal flakes, small and just a little bit chunky.

Processed carrots to a tiny dice
Mix the carrots with all the ingredients above and simmer in a skillet on medium low for about 5-8 minutes or until the carrots are tender-crisp and the syrup is thick and reduced by at least half, most of it absorbed into the carrots and raisins. (With only a tablespoon or two of syrup remaining in pan.) If you’d like your chutney to have a bit more kick to it, add another teaspoon of vinegar or a squeeze of fresh lemon, once you’ve removed the pan from the burner. Cool and put in a tightly covered container in the fridge to let the flavors mingle and intensify. Serve cold with a small spoon, along side a plate of crackers and a small bowl of whipped cream cheese.

With a book deadline quickly approaching, we are going to try doing something a little different on Fridays to give us more time to write and create recipes for We Laugh, We Cry, We Cook the book. We’re still experimenting, but for now it will vary from week to week, from a featured guest blogger, to an all picture post, to an oldie-but-goodie recipe, to giveaways of books or our favorite foodie items like today’s giveaway.

Yesterday, I (Rachel), shared a recipe for Pumpkin Cookie Butter Cookies, using Trader Joe’s cookie butter, a peanut-butter like spread that tastes kind of like gingerbread. Since Trader Joe’s isn’t available everywhere, I thought it might not be fair to rave about a product that some of you can’t get your hands on. My mom & lovely co-blogger just so happens to be heading to Portland tomorrow and is going to pick up a jar to give to one lucky blog reader.
